Next-Level Sourdough Workshop

Ready to build on your sourdough foundation and transition to more masterful artisan technique? This hands-on workshop is designed specifically for bakers who have an understanding of the basics and want to conquer the art of the perfect loaf. Recommended for those who have already taken my Sourdough for Beginners workshop, or for those who have some experience with sourdough and want to elevate and expand their skills.

In this intermediate session, we move past the basics of sourdough starters and mixing, to tackle the precise variables that separate a good loaf from an extraordinary one!

What we will master together in this 90-minute workshop:

  • The art of bulk fermentation: Learn to read your dough — not the clock — to achieve optimal rise, structure, and flavor development.

  • Level up with inclusions: Learn when and how to add savory or sweet inclusions into your dough for endless flavorful possibilities. Two inclusion options will be provided for you to choose from during the workshop.

  • Hands on shaping techniques: Master shaping and the mechanics of surface tension for loaves that hold their shape. I will provide a prepared (bulk fermented) dough for hands on shaping during the workshop.

  • Intricate scoring artistry: Confidently score your loaf with shallow cuts for decorative patterns and a basic slash to execute both intricate designs and spectacular oven spring.

Bring your questions and your passion for the craft. You will leave this workshop an inclusion stuffed loaf, shaped and ready to take home and transfer to the refrigerator for proofing. More importantly, you will gain a deeper understanding of dough mechanics and the confidence to take your skills to the next level.

What you’ll need to bring: Bring a 9-10” round or oval proofing basket to take your shaped dough home and bake the following day.
